Pininyahang Manok Recipe

Ingredients


1 kilo                       chicken thigh or wings
1 big can                 Pineapple Chunks, drained reserve syrup
1 big can                 Evaporated Milk
1 pc medium           Red Bell Pepper
1 pc medium           Green Bell Pepper
1 teaspoon              whole peppercorn
2 tablespoon           patis / fish sauce
1 tablespoon           ginger julienne sliced
1 medium               onion, chopped
5 cloves                  garlic, chopped
                               salt and pepper

Procedure

1.     Marinate chicken in pineapple syrup and patis for 20minutes.
2.    Saute ginger , garlic and onion. Add chicken without the  juice. Saute until slightly brown.
3.    Add the syrup and peppercorn. Cover and simmer for 15 minutes.
4,    Add the evaporated milk , pineapple chunks and the bell peppers.
        Simmer for 5 minutes uncovered while stirring continuously.
