Classic Tomato Sauce

Homemade Tomato Sauce

Ingredients

1/4 cup minced carrots
1/4 cup minces onions
1/4 cup minced celery
3 tablespoon butter
1 tablespoon oil
1 & 1/2 tablespoon flour
1 & 1/2 cup stock
2 lbs. chopped ripe tomatoes
1/4 teaspoon salt
1/8 teaspoon sugar
2 cloves chopped garlic
4 stems parsley
1/2 bay leaf
1/4 teaspoon thyme

Procedure 

1. Saute carrots , onions , celery in butter and oil for 10 minutes without letting them brown.
2. Add flour and cook slowly for 2 to 4 minutes, stirring constantly.
3. Bring stock to boil, off heat stir into the first mixture of carrots , onions and celery. 
4. Add all the rest of the ingredients. Simmer for 2 hours, skimming occasionally, and adding water if the sauce reduces and thickens too much.
5. Strain and mash . Correct seasoning according to your taste. If you wish to be darker. You may add tomato paste and simmer for 5 minutes. 

** Sauce may be refrigerated or frozen **
