Ingredients:
500 grams Oxtripe, boiled and diced
2 tablespoon olive oil
1 piece onion, sliced
1 cup garbanzos
2 cup chorizo, sliced
1/4 cup tomato paste
1 cup tomato sauce
1&1/2 cup stock ( can be adjusted )
3 pieces red bellpepper, sliced
1 teaspoon paprika bilbao
1/4 teaspoon cayenne pepper
Salt and pepper
Procedure:
1. Saute garlic and onion. Add chorizo and continue sauteing. Add the oxtripe, tomato paste, cayenne pepper and paprika bilbao. Simmer for a 3 to 5 minutes then add the stock.
2. Add tomato sauce and garbanzos cook for minutes. Season with salt and pepper.
3. Add the red bell pepper before turning off heat. Serve.
