Italian Salsa Pomodoro

Ingredients:

1               kilo                 fresh tomato
1               tablespoon      chopped parsley
1               teaspoon         dried basil
1/4            teaspoon         oregano
1/8            teaspoon         thyme
                 Salt and pepper

3               pieces             medium onions, chopped
8               cloves            garlic, chopped
2               cups               tomato sauce
1/2            can                 tomato paste
1/4            cup                 olive oil
1               piece              bay leaf
2 to 3       cups                stock
1 & 1/2    tablespoon      fresh basil, finely chopped


Procedure:

1. Make an X slit on the bottom of the tomato
2. Boil tomatoes until done. Put in ice water, peel and remove seeds, chop.
3. Saute onion until wilted then add garlic.
4. Add chopped tomato, stir and mix. Then add tomato sauce, tomato paste and stock.
     Simmer and mix.
5. Add all herbs except for the fresh basil. Simmer.
6. Season with salt and pepper. Simmer until thick. Add basil before turning off the heat.
